Spicy Tofu Noodles
  1. Mix the marinade ingredients together.

  2. Drain the tofu and pat dry with kitchen paper to remove excess water. Add half of the marinade and mix through thoroughly.

  3. Either cook the tofu in an air fryer (180°C for 12 minutes), or pan fry in extra sesame oil until crispy on all sides. This will take around 8 minutes.

  4. Heat a large pan of water and add the noodles when simmering. Cook as per pack instructions, depending on type used. Add the edamame beans to the water for the last 3 minutes of cooking. Drain the noodles and run under cold water to prevent sticking.

  5. Gently sauté the vegetables in the remaining sesame oil until softened. Next, add in the remaining marinade as well as the noodles and edamame beans.

  6. Add the crispy tofu, crushed peanuts, coriander and spring onions and serve.
