Chop red potato into half inch pieces, oil and season, pop in 425 oven for 20-30 minutes, flipping half way through
Cook your bacon to perfection, let cool, chop, put in bowl
Start cooking egg to desired level
Once potato are out put in bowl with bacon, stir
Top with egg, cheese, and chopped red onion
Serve with sauce and half an avocado
