Almond Croissant Shortbread Bars
  1. Preheat oven to 170 Celsius fan

  2. Combine all base ingredients in a food processor and pulse until it comes together

  3. Press down evenly into the prepared 2lb loaf tin

  4. Using the same bowl for the processor, add all topping ingredients except the flaked almonds and icing sugar

  5. Blend and scrape down, then blend again until smooth

  6. Pour the topping on top of the prepared base

  7. Top with flaked almonds

  8. Bake for 35 minutes

  9. Leave to cool

  10. Dust with icing sugar and slice into 8 bars

  11. Enjoy
