Add Campari and melted down coconut oil to a jar
Shake well and let infuse at room temperature for 6-8 hours
Place in freezer overnight
Break up the solidified oil and discard
Strain Campari to remove smaller chunks
In a cocktail shaker, add green grapes
Muddle grapes well
Add lemon juice, simple syrup, coconut washed Campari, and gin to the shaker
Add ice and shake well
Double strain into a chilled lowball glass over ice
Garnish with green grapes
Serve and enjoy
