Toss 1 pound chopped English cucumbers and ¾ teaspoon kosher salt together in a medium bowl. Let sit for 20 minutes. Meanwhile, cook the bacon and make the dressing.
Place 5 slices chopped thick-cut bacon in a large skillet and cook over medium-low heat, stirring occasionally, until browned and crisp, 8 to 10 minutes. Transfer with a slotted spoon to a paper towel-lined plate.
Stir ½ cup sour cream, ¼ cup mayonnaise, 1 tablespoon ranch seasoning powder, and 2 tablespoons of the coarsely chopped fresh dill together in a large bowl. Taste and season with black pepper and more ranch seasoning powder as needed.
Pour off any liquid from the cucumbers. Add the cucumbers, bacon, 2 ounces shredded cheddar cheese, and ½ thinly sliced small red onion to the dressing and toss to combine. Garnish with the remaining 1 tablespoon coarsely chopped fresh dill and a few cracks of black pepper.
