Preheat the oven to 350°F. Oil a baking dish of your choosing, could be a 9-inch round pan, or a rectangular tart form like we used.
Mix the flour, sugar, baking powder, baking soda, and salt.
Whisk eggs, then add the greek yogurt, olive oil, orange juice, and orange zest.
Create a well in the flour mixture and whisk in the wet ingredients.
Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted into the cake comes out clean.
Let cool for at least 10 minutes before slicing.
