Homemade Sloppy Joes
  1. Cut the top off a garlic bulb, drizzle with olive oil, season with salt and pepper, wrap in foil, and roast at 400 degrees for 45 to 50 minutes until soft.

  2. Grate the onion and dice the bell pepper and jalapeño.

  3. In a skillet over medium high heat, melt the butter and cook the onion and bell pepper until softened and lightly caramelized, about 5 minutes. Set aside.

  4. Cook the ground beef in a large pot over medium high heat until browned, breaking it up as it cooks, then drain the excess grease.

  5. Add the veggies and jalapeño back in. Squeeze in the roasted garlic, then add the tomato sauce, ketchup, and Worcestershire sauce and mix.

  6. Season with brown sugar, chili powder, dry mustard, salt, and pepper. Stir and bring to a simmer.

  7. Reduce heat and cook for about 20 minutes until thickened. If it gets too thick, add a little water in stages until you reach your desired consistency.

  8. Toast your buns, load them up, and serve.
