Cube chicken and season with garlic powder, paprika, cumin, salt, and pepper
Over medium-high heat, sear chicken for around 6 minutes each side until fully cooked through. Set aside.
Cook corn according to package directions. Let cool and drain water.
Blend cottage cheese and lime zest. Set aside.
Mix together corn, lime juice, onions, chilis, cilantro, avocado, and queso fresco. Stir in cottage cheese mix.
Assemble bowl with cooked rice, chicken, and cilantro on top. Top with tajin (optional) and enjoy.
