Dice and cook 1 chicken breast

Slice ¼ red onion
Chop ¼ cup green onion
Chop ¼ cup cilantro
Grate 2 garlic cloves
In a bowl, combine soy sauce, rice vinegar, toasted sesame oil, and honey or sweetener to make dressing
Combine carrots, red onion, green onion, cilantro, and garlic in a large bowl
Add cooked chicken to the salad
Pour dressing over the salad and toss to combine
Top with sesame seeds, chili oil, and chopped cashews or peanuts
