Preheat oven to 375°F (190°C). Place a wire rack on a baking sheet and grease it with cooking spray.
Set up a breading station. In one dish, place the flour. In another dish, the eggs. In a third dish, combine the crushed cornflakes, garlic powder, paprika, salt, and pepper.
Take each chicken breast and dip it into the flour, then egg, then cornflake mixture. Press the cornflakes onto the chicken to adhere.
Place the breaded chicken breasts on the wire rack on the baking sheet, with some space between them.
Bake the chicken for about 18 minutes, or until cooked through to 165°.
While the chicken is baking, mix together the honey, hot sauce, melted butter, and apple cider vinegar.
Brush the hot honey glaze generously over each piece of chicken while it’s still hot.
