Cottage Cheese Rum &Raisin Ice Cream
  1. Soak the raisins in the rum.

  2. Add cottage cheese and crème fresh, rum (not the raisins) and honey to a food processor or high powered blender and pulse/process until smooth and creamy.

  3. Put the mixture into a lidded container stir in the raisins and place in the freezer for about 4 hours, or until hard.

  4. Remove from the freezer, let thaw for 5-10 minutes, just until you can easily scoop it. Use an ice cream scoop to scoop into bowls and enjoy.
