Place all ingredients into a bowl and mix them with your hands until fully combined.
Leave the mixture to sit for 15-30 minutes so the flavours can intensify. (This is not a mandatory step).
Heat a little olive oil in a pan and add about one tablespoon of the mixture into your hands, flatten it and shape it gently, then cook it on each side for approx. 2-3 minutes or until golden.
They can be enjoyed both cold and hot.
I like to serve mine with a dip made out of Greek yoghurt (dairy-free option also available) and mint.
They can also be served with ketchup, BBQ sauce or any other sauces you prefer.
