Add all the ingredients, except the cream cheese, to the slow cooker. Add 250ml of boiling water or if you want chicken stock, season with salt and pepper and cook on high for 3 + hours or low for 6 -7 +hours.
Once the chicken is cooked, remove from the slow cooker to a plate and shred with two forks.
Season the sauce and stir through the cream cheese. Add the chicken back in and heat for 10–15 more minutes to warm through.
Serve immediately with your choice of sides, feel free to garnish with coriander and lime wedges.
