To make the dough, mix the flour, water, 0.5 tsp salt, and 2 tbsp olive oil and knead until you have a soft dough. Cover and set aside for 30 min.
In the meantime, boil the 3 medium sized potatoes and mash them. Add 1 tbsp olive oil or vegan butter and season with salt & pepper, to taste.
Cut the dough into equal portions, roll it out and fill with the mashed potatoes, vegan pesto of choice, and shredded vegan cheese.
Close the dough and cook both sides in a pan on medium heat until golden.
Brush with a little olive oil or melted butter mixed with fresh herbs of choice.
Serve hot and enjoy.
