Melt the butter in a sauce pan on low.
Once melted add in the flour and whisk until a thick paste forms. Continue cooking for 1-2 minutes until slightly golden.
Gradually add in the milk bits at a time, whisking constantly until all the milk is used up. Make sure there are no lumps.
Bring to a gentle boil and cook for a few minutes until it thickens.
Shut off the heat and gradually add the shredded cheddar cheese, whisking again.
Add the Dijon mustard and listed seasonings. Taste test and adjust.
