In a bowl, combine 2 ¾ cups all purpose flour, 1 tsp salt, 2 tsp instant yeast, and 3 tbsp cocoa powder.
Add in 1 cup warm water, ¼ cup warm honey (or maple syrup) and 2 tbsp olive oil. Mix until a shaggy dough forms.
Transfer to a flat surface and knead for about 5 minutes until a smooth, slightly stick dough forms.
Cover with plastic wrap and allow to rise in a very warm place for 1-2 hours.
Divide the dough into 4. Flatten one piece down into a rectangle, roll it long wise and then pinch the ends together to create a baguette shape. Repeat with the other piece of dough.
Brush with some water and sprinkle on some oats (optional). Press the oats in so they stick.
Allow to rise for another 30 minutes until they've about doubled in size.
Bake at 350 F for 30 min. Allow to cool, slice and enjoy!!
