  1. Blanch the fresh rice noodles if they are a little hard

  2. Add 3 tablespoon vegetable oil to a wok or large skillet

  3. Stir-fry the beef until cooked through

  4. Add the Chinese broccoli and stir-fry until tender

  5. Push the ingredients to the side of the wok and add the 2 eggs

  6. Scramble the eggs

  7. Add the rice noodles, 2 tsp brown sugar, 2 tsp white vinegar, 2 tsp dark soy sauce, 1 tbsp soy sauce, and 1.5 tbsp oyster sauce

  8. Toss everything together until the noodles are evenly coated and heated through

  9. Serve hot, optionally with Sriracha or seeded chili sauce for a little kick
