Blanch the fresh rice noodles if they are a little hard
Add 3 tablespoon vegetable oil to a wok or large skillet
Stir-fry the beef until cooked through
Add the Chinese broccoli and stir-fry until tender
Push the ingredients to the side of the wok and add the 2 eggs
Scramble the eggs
Add the rice noodles, 2 tsp brown sugar, 2 tsp white vinegar, 2 tsp dark soy sauce, 1 tbsp soy sauce, and 1.5 tbsp oyster sauce
Toss everything together until the noodles are evenly coated and heated through
Serve hot, optionally with Sriracha or seeded chili sauce for a little kick
