Preheat oven to 425 degrees
Slice sweet potatoes and sprinkle them with taco seasoning. Place on baking sheet with parchment paper and bake for 20 minutes or until sweet potatoes are fork tender
When the sweet potatoes are ready, assemble each quesadilla by sprinkling a small amount of shredded cheese on one half of the tortilla, then layer several sweet potato slices on top of the cheese, then add diced green chiles, and a sprinkle of cotija cheese before topping with the remaining layer of shredded cheese. Fold the undressed side of the tortilla over the other and gently press down to seal.
Heat butter/oil in skillet and lightly fry tortilla on each side until golden.
Garnish with lime wedges, cilantro, sour cream, and guacamole/avocado
