Vegan Cabbage Roll Casserole
  1. Preheat oven to 400 degrees Fahrenheit

  2. In a large mixing bowl, add 1 cup of TVP with 1 cup of veggie broth or vegan beef bouillon broth to rehydrate

  3. Finely chop cabbage and dice onions

  4. Place chopped cabbage and diced onions on top of the soaking TVP without stirring

  5. Add 1 cup of brown rice and 2 cups of water to the mixing bowl

  6. Add 1 can of tomatoes to the mixing bowl

  7. Stir and mix all ingredients together well

  8. Add cinnamon, cumin, garlic powder, salt, and pepper, and mix well

  9. Oil the bottom of a 9x11 casserole dish (optional)

  10. Pour all ingredients from mixing bowl into the casserole dish

  11. Cover with tin foil and place in the oven

  12. Bake for 1 hour and 45 minutes

  13. Remove tin foil and bake for an additional 15-20 minutes to brown the top

  14. Serve and enjoy with a drizzle of olive oil if desired
