In a large bowl, combine the all purpose flour, sugar, baking powder, and salt. Add the melted ghee, butter, or oil, followed by the warm water. Mix until a dough forms.
Divide the dough into six equal pieces. Cover them and let them rest for 30 minutes.
After resting, roll out each piece of dough into a thin layer, not necessarily a perfect circle. Spread some ghee or butter on top and lightly sprinkle with flour.
Shape each rolled piece into a cup and then form a rounded cone. Repeat this process for the remaining pieces.
Lightly oil the cones, cover them with plastic wrap, and refrigerate for at least 2 hours.
When ready to serve, roll out the dough again and fry it in a cast iron skillet until it turns golden brown and crispy, being careful to monitor the heat to prevent burning.
While frying, baste both sides with additional ghee or butter.
You can either tear the bread for a traditional Trinidad style look or keep it whole. Serve it alongside your favorite curry and enjoy.
