Chicken Satay Crunchy Quinoa Salad
  1. Preheat oven to 375F

  2. Add cooked quinoa to a baking sheet

  3. Toss quinoa with sesame oil, soy sauce and chili crisp

  4. Spread quinoa into an even layer

  5. Bake 20-25 minutes or until golden and crunchy

  6. While quinoa bakes, add all dressing ingredients to a mini blender

  7. Blend dressing until smooth

  8. In a large bowl, add shredded chicken and remaining salad ingredients

  9. Top with crunchy quinoa

  10. Pour dressing on top, toss and enjoy
