  1. Preheat oven to 325F and grease a loaf pan with butter or oil

  2. In a large bowl, mash the bananas, leaving a few chunks for texture

  3. Whisk in the olive oil and coconut sugar until combined

  4. Add the eggs, yogurt and vanilla and whisk until smooth, about 1 minute

  5. Stir in the dry ingredients until just incorporated

  6. Pour the batter into the loaf pan

  7. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean

  8. Allow to cool for 10 minutes before removing from the pan and serving
