Preheat oven to 325F and grease a loaf pan with butter or oil
In a large bowl, mash the bananas, leaving a few chunks for texture
Whisk in the olive oil and coconut sugar until combined
Add the eggs, yogurt and vanilla and whisk until smooth, about 1 minute
Stir in the dry ingredients until just incorporated
Pour the batter into the loaf pan
Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean
Allow to cool for 10 minutes before removing from the pan and serving
