Seasoned Egg & Sausage Breakfast Cups
  1. Preheat oven to 350 degrees.

  2. Spray a 12-cup muffin pan with cooking spray and set aside.

  3. In a large bowl, beat eggs and milk until well combined.

  4. Stir in salt, stuffing mix, sausage and half of the cheese.

  5. Divide egg mixture into the 12 muffin cups and top with remaining cheese.

  6. Bake for about 25 minutes at 350 degrees.

  7. Allow muffins to cool slightly before using a knife to gently release them from the pan.

  8. Garnish with parsley, if desired, and serve hot.
