In a large bowl, whisk together the 1.5 cups All-Purpose Flour, 0.5 tsp Salt, and 0.25 tsp Baking Powder until evenly distributed.
Add the 2 cups Extra-Sharp Cheddar Cheese, 0.25 tsp Paprika, 0.25 tsp Garlic Powder, 0.25 tsp Onion Powder, and 0.125 tsp Cayenne Pepper. Stir until the cheese is fully coated with the flour mixture.
Add the 0.5 cup Unsalted Butter, which must be cold and cubed. Use a pastry cutter or your fingers to work the butter into the flour mixture until the texture resembles coarse crumbs.
Sprinkle the 2 tbsp Ice Water over the mixture, one tablespoon at a time. Use a fork to gently toss and combine until the dough just begins to hold together when pressed.
Turn the dough out onto a lightly floured surface and knead it briefly, just until it comes together into a smooth ball.
Divide the dough into two portions. On a lightly floured surface, roll each portion to ⅛-inch thickness.
Cut into desired shapes using a sharp knife, pizza cutter, or cookie cutters. Transfer the shapes to a parchment-lined baking sheet, spacing them ½ inch apart.
Prick each cracker with a fork to prevent puffing during baking.
Bake in a preheated 375°F oven for 12-15 minutes until the edges are light golden brown.
Remove from the oven and let cool completely on the baking sheet.
