Prepare the Sponge Cake Base: Bake a simple sponge cake or use a pre-made one. Let it cool completely.
Make the Strawberry Puree: Blend strawberries until smooth. Transfer the mixture to a saucepan and add the sugar and lemon juice. Heat until the mixture simmers.
Dissolve Gelatin: Sprinkle gelatin over a few tablespoons of water. Allow it to bloom for 5 minutes, then stir it into the warm strawberry purée until completely dissolved. Let it cool to room temperature.
Whip the Cream: In a chilled bowl, whip heavy cream until stiff peaks form.
Combine the Mousse: Carefully fold the cooled strawberry mixture into the whipped cream until well combined. Mix slowly to retain the mousse’s airiness.
Assemble the Cake: Place the sponge cake in a springform pan. Spoon the mousse mixture on top and gently smooth the surface evenly.
Chill: Refrigerate for at least 4–6 hours, or overnight, to allow the mousse to fully set.
Garnish and Serve: Top with fresh strawberries and whipped cream just before serving.
