Peel the courgettes and roughly chop along with the onion and garlic.
Add to a pan on medium heat and sauté for 10 minutes until everything is lightly browned and softened.
Place your pasta onto boil until al dente (when draining, reserve a mugful of pasta water)
Remove the courgette mix from the pan and leave to cool. Add a generous amount of olive oil and fry the bacon off until browned and crispy.
Add the courgette mix to a blender along with the remaining ingredients (aside from the bacon). Blitz until smooth.
Reserve a handful of bacon to serve, then place the sauce into the pan with the rest of the bacon.
Add the cooked pasta into the pan along with a generous amount of pasta water and mix together on a low heat.
Serve up with the extra bacon, a drizzle of olive oil and extra black pepper.
