Make the KICKASS Chocolate Chips: In a small bowl, mix the melted coconut oil with the unsweetened cocoa powder until well combined. Place the mixture in the freezer until set (30 minutes or less).
Preheat the oven to 350°F (175°C).
Make the Cookie Dough: In a bowl, combine protein powder, oat flour, almond flour, and salt. Mix well. Add peanut butter, milk, and maple syrup; mix until combined. Fold in the honey.
Prepare the Chocolate Chips: Once the chocolate mixture has hardened in the freezer, remove it and chop into small pieces to create your KICKASS chocolate chips. Add to the mixture immediately.
Combine and Bake: Fold the KICKASS chocolate chips into the cookie dough. Scoop dough into 10 balls and place on a lined baking sheet. Bake for 7 minutes. Do not over-bake—pull them out while still softened.
