Cinnamon Roll Date Cake (gf / Df)
  1. Preheat the oven to 350°F

  2. Combine cinnamon topping ingredients (cinnamon, coconut sugar, melted coconut oil) in a small bowl and mix well

  3. Add chopped dates to a small bowl with 1 cup boiling water for ten minutes

  4. Transfer dates to blender or blend using an immersion blender until smooth

  5. Add date paste, eggs, maple syrup, olive oil and vanilla extract to a large bowl and whisk until thoroughly combined

  6. Fold in flour, baking soda, baking powder, salt and cinnamon until batter is smooth and uniform

  7. Transfer to a greased 9x9 baking dish then sprinkle the cinnamon mixture evenly over the top of the batter

  8. Bake for 35-45 minutes until a toothpick stuck into the center of the cake comes out with just a few crumbs

  9. Combine glaze ingredients (powdered sugar, dairy free milk, vanilla extract) in a small bowl and whisk well

  10. Drizzle glaze generously over cake
