Italian Biscotti (cantucci)
  1. Add all the dry ingredients into the bowl: flour, sugar and almonds, pinch of salt and baking powder.

  2. Mix all of the dry ingredients.

  3. Add vanilla extract, a touch of honey.

  4. Add two eggs, the zest of half a lemon and the zest of half an orange.

  5. Mix it all together until there is no more dry flour.

  6. Place the dough on top and gently work it so it's nice and flat and a rectangular shape.

  7. Bake it all at under 70 degrees for about 20 minutes until nice and golden on top.

  8. Let it cool down for 15 minutes before cutting it.

  9. Cut them about 1 finger thick.

  10. Place them back in the tray flat side down, ready for the second baking.

  11. Bake them back in the oven at 160 degrees for 10 minutes.
