Prep: chop onion and potatoes (optional, if they are not baby potatoes)

Optional: sear chicken thighs lightly to brown
Add the chicken thighs, onion, and potatoes to the slow cooker
Season with oregano, salt, and pepper. Drizzle olive oil and stir to combine
Pour the sauce over the chicken and potatoes. Cook on high for 4-6 hours on high
Optional: Mix the cornstarch and water, then stir into the sauce to thicken it
Cook yellow or white rice. Serve the chicken and potatoes over rice
