Preheat oven to 350°F and grease or line a muffin tin.
Blend oats in a blender or food processor until you have a fine oat flour.
In a large bowl, mix together oat flour, protein powder, baking soda, baking powder, salt, and pumpkin pie spice.
In another bowl, whisk pumpkin purée, eggs, sweetener, milk, and vanilla until smooth.
Fold the dry ingredients into the wet until just combined. If you’re using chocolate chips, gently stir them in now.
Divide batter evenly into muffin tin (makes 12 muffins).
Bake 18–20 minutes, until a toothpick comes out clean.
Let cool slightly before serving.
Optional to serve: Top with a dollop of vanilla Greek yogurt before serving
