Heat the oven to 350°.
On a work surface, open one sheet of phyllo dough and brush with butter. Top with a second piece of filo dough on top and butter again.
Sprinkle about 2-3 Tbsp of the grated cheeses on each filo stack. Gather into a nest and place on a greased pan.
Brush the edges again with butter, sprinkle sesame seeds on top and break an egg into each nest. Season the egg with salt, black pepper and put in the oven to bake.
Bake for about 25 minutes or until golden and bubbly.
DIPPING OIL: put all the ingredients except the oil in a bowl. Heat the oil well and pour into the bowl. Mix well.
Serve the pastries hot with the seasoned oil drizzled on top.
