Preheat oven to 220C
Mix the dough ingredients together with a spoon and quick knead
Cover with clingfilm and let it sit for 20-30 minutes or up to 2 hours
Flour your surface well as the dough is sticky, knead for a few minutes and cut into 8 pieces
Shape each piece into a round and roll it out thin with flour on both sides
Add pesto, basil, and mozzarella and garlic mix to each round
Pinch together and gently roll out again, being careful not to burst them
If holes appear, pinch them together with your fingers
Place on a baking sheet with greaseproof paper and brush with olive oil
Bake for 7-9 minutes
