Bring a pan of salted water to the boil. Add the potatoes and simmer for 10-12 minutes, until just tender. Add the green beans for the final 3 minutes. Drain and leave to cool slightly.
Whisk together all dressing ingredients in a small bowl or jar. Add a splash of water if needed to loosen. Season well.
In a large bowl, toss the potatoes, green beans, radish, apple, spring onions, and dill with the dressing.
Platter up and ENJOY!
