Preheat the oven to 450F.
Bring a large pot of salted water to a boil. Add the baking soda and the potatoes. Stir and boil uncovered for 10 minutes (or until a fork penetrates easily) and then drain.
Place the potatoes in a bowl and add the olive oil, garlic powder, salt, and pepper. Toss until the potatoes are evenly coated and their surface breaks down into a mashed potato consistency (this is what will crisp up).
Transfer the potatoes onto a large baking sheet and separate them so they're not touching each other. Bake undisturbed for 20 minutes on the first side (until deep golden brown), then flip and bake for an additional 15-25 mins (depending on the size of the potatoes) until golden brown and crispy on the second side. Sprinkle with fresh parsley and enjoy!
