In the bowl of a food processor, combine the flour and sugar, then add the cold butter pieces.
Pulse the food processor a few times until the butter, flour and sugar mixture resembles coarse crumbs, with no visible pieces of butter.
Place the flour mix in a bowl and add the beaten egg and egg yolk until the dough comes together into a ball.
Wrap the dough in parchment and chill in the refrigerator for at least 30 minutes. For best results, chill overnight.
After resting, preheat your oven to 350°F.
Roll out about ¾ of the pastry to fit your pie dish. Roll out the remaining pastry to create lattice strips (about ¾ inch wide) for the top.
Spread your favorite jam in the pie crust, then place the lattice strips over the top.
Bake in the preheated oven for about 25 minutes, or until golden brown.
