Mix all sauce ingredients & set aside
Finely chop lettuce & lightly coat with some sauce
Chop onion
Season mince with salt & pepper, mix well
Divide mince into balls: 100g each for small tortillas, 200g each for large tortillas
Press mince firmly onto tortillas & spread evenly
Heat pan with light oil, cook beef side down (3–4 mins) until crispy
Flip, add cheese, cover & cook until melted + tortilla golden
Remove, add sauce, lettuce & onion
Fold & serve immediately
