Preheat oven 180°c, and prepare an oven tray with foil.
Bring sugar and water to the boil, to make a syrup, ensuring the sugar fully dissolved.
Add Wallnuts to the syrup for 5 minutes.
Drain the Wallnuts (save the syrup for cocktails) and spread the Wallnuts on the tray. Use chopsticks to make sure the nuts are separated, then bake in the oven until golden (3-4 minutes).
Sprinkle with a pinch of salt, and allow to cool for 5 minutes.

Test: soak 100g nuts in 200ml water and 4g salt, for 6 hours.
Drain, dry, syrup.
Dehydrate in a 60°c oven for 12 hours, stirring every 2 hours.
