Latkes - The Best Hash Browns
  1. Preheat your oven to 200°F. Take a sheet pan, put a rack over it, and put it in the oven.

  2. Crack the egg into a large mixing bowl, and beat it lightly with a fork or whisk. Add the flour, baking soda, salt, pepper, and stir together.

  3. Chop the onions and add them to the binder.

  4. Peel the potatoes and shred them with a box grater or food processor. Squeeze out as much moisture as possible.

  5. Add the potatoes to the bowl with the egg mixture, and stir gently until the potatoes are all coated.

  6. Pour enough oil into the pot to cover the bottom about ¼ inch deep. Heat the oil to about 375°F (190.6°C).

  7. Make patties about 3 inches across and about ½ inch high, and ease them into the oil one at a time.

  8. Cook for 5 to 7 minutes until golden, then flip and cook another 3 to 4 minutes until golden.

  9. Remove the patty and put it on the rack over the baking pan in the oven to crisp.

  10. After about 10 minutes, sprinkle lightly with large grain salt and serve hot.
