Crispy Chicken Sandwich With Spicy Pickle Slaw

Chicken Marinade

  1. Put chicken in large bowl and combine thoroughly with all marinade ingredients

  2. Put aside while you prepare the slaw

    Pickle Slaw

  1. Combine all ingredients and chill

Fry Chicken

  1. Season flour with salt & pepper (enough to coat chicken)

  2. Drain extra marinade into flour and mix

  3. Press chicken into flour to coat thoroughly

  4. Dredge in marinade bowl (maybe with a splash of buttermilk)

  5. Press back into flour to double coat

  6. Heat enough oil to cover half of the chicken thigh to frying temp

  7. Pan-fry chicken on one side until crispy (3-4 minutes)

  8. Flip and fry the other side until crispy

  9. Season immediately with salt

  10. Serve on toasted bun layered with pickle slaw
