Lemon Herb Greek Meatballs With Homemade Tzatziki
  1. Combine 1 lb ground beef, 2 tbsp dill, ½ cup panko, ¼ red onion, 1 egg, 3 minced garlic cloves, 1 tbsp lemon juice, garlic powder, onion powder, 1 tsp oregano, 1 tsp paprika, ¼ tsp basil, salt, and pepper

  2. Roll mixture into 1 inch sized meatballs (makes approximately 20)

  3. Sear meatballs on medium heat for 2-3 minutes on each side

  4. Bake at 400°F for 10 minutes until internal temperature reaches 165°F

  5. Combine 2 sliced mini cucumbers, ¾ cup cherry tomatoes, ¼ red onion, 1 roasted red pepper, 1 tbsp red wine vinegar, 1 tsp dill, 1 tsp basil, ¼ tsp oregano, salt, and pepper for Greek salad

  6. Mix ½ cup Greek yogurt, 1 grated cucumber (drained), ¼ cup dill, lemon juice, 1 tbsp red wine vinegar, 3 grated garlic cloves, salt, and pepper for tzatziki

  7. Cook ⅔ cup pearl couscous according to package instructions

  8. Stir 1 tbsp lemon juice, 1 tsp basil, salt, pepper, and garlic powder into cooked couscous

  9. Assemble plate with 1 serving tzatziki, beef meatballs, Greek salad, and couscous

  10. Garnish with dill and serve
