Roll mixture into 1 inch sized meatballs (makes approximately 20)
Sear meatballs on medium heat for 2-3 minutes on each side
Bake at 400°F for 10 minutes until internal temperature reaches 165°F
Combine 2 sliced mini cucumbers, ¾ cup cherry tomatoes, ¼ red onion, 1 roasted red pepper, 1 tbsp red wine vinegar, 1 tsp dill, 1 tsp basil, ¼ tsp oregano, salt, and pepper for Greek salad
Mix ½ cup Greek yogurt, 1 grated cucumber (drained), ¼ cup dill, lemon juice, 1 tbsp red wine vinegar, 3 grated garlic cloves, salt, and pepper for tzatziki
Cook ⅔ cup pearl couscous according to package instructions
Stir 1 tbsp lemon juice, 1 tsp basil, salt, pepper, and garlic powder into cooked couscous
Assemble plate with 1 serving tzatziki, beef meatballs, Greek salad, and couscous
Garnish with dill and serve
