Melt butter in a pan.
Cook the red bell pepper and onion for five or six minutes, until softened.
Add chicken and taco seasoning, and stir to combine with the vegetables. Stir until it’s all heated through, and remove into a bowl.
Lightly grease the bottom of the pan, and put down a tortilla.
Put a thin layer of cheese on the tortilla, followed by some of the chicken vegetable mixture, and another thin layer of cheese. Add the second tortilla on top.
After a couple of minutes, flip it. Wait another minute and check to see if the cheese is melted.
