One Pot Creamy Boursin Risotto
  1. SAUTE: In a large pot over medium low heat, add a knob of butter and a dash of oil and allow to heat. Fry the onions for a few minutes until softened. Add in the garlic, sundried tomato and rice and cook for another minute to toast slightly.

  2. SIMMER: Pour in the wine and deglaze the bottom. Leave to evaporate for a minute before adding the chicken stock one cup at a time - waiting for it to soak into the rice before adding the next cup.

  3. STIR: Once the last cup has been absorbed, turn off the heat and stir in the spinach, Boursin and parmesan. Season with salt and pepper, cover with the lid and leave for a few minutes.

  4. ADJUST: Serve with additional parmesan and a sprinkle of cracked black pepper.
