Adult Mac & Cheese
  1. Fry the chopped bacon and drain, saving the grease. Cook the onions in the same pan with a little bit of grease until slightly soft, then add the stewed tomatoes, cooked bacon and garlic. Cook for a few minutes to meld flavors, and set aside. You can make this part in advance.

  2. Cook the macaroni noodles to al dente, and strain. While the noodles cook, melt a couple tablespoons of bacon grease in a medium saucepan. Whisk in a an equal amount of flour, and cook while whisking until it is slightly brown and fragrant. Whisk in the milk, and stir until you have a thick white sauce. Add in the cheese and cream cheese, and stir until melted. Season to taste. Garlic salt and a little bit of ground mustard are good if you have them.

  3. Grease your baking dish(es). You can either mix the cooked noodles, sauce and bacon-tomato mixture together then pour it into the pan, or you can layer it lasagna style. When your pan is full, sprinkled the top liberally with breadcrumbs and dot with butter. Bake for about half an hour around 350 until the top is golden.
