  1. Cut an aubergine into pieces, salt and then dry it . Once moisture is removed - fry it in a good Olive Oil until crispy.

  2. In the same pan, cook sausage add shallot , cherry tomatoes, tomato paste and add a pasta water. Let it cook, add plenty of parsley .

  3. Add the aubergines, after cooking your pasta in plenty of salted water. sauté it in a pan, adding the parmesan or salted ricotta.

  4. Serve, another grated cheese, parsley and...enjoy your meal!
