In a wok over medium heat, stir fry Pork Belly until the fat renders and gets a slight crispy layer on both sides
Season with salt, black pepper, and sugar to taste
In the same wok, add minced garlic, white scallion and onion. Cook until aromatic and fragrant
Add in the diced kimchi and its juices. Continue to stir fry for about one minute
Deglaze with cooking wine
Add soy sauce and Gochuchang and mix until well-combined
In a blender, add silken tofu, kimchi, kimchi juice, Gochuchang, and sesame oil
Blend until everything is smooth and creamy
Cook udon according to package instructions
Assemble in order: udon, pork belly kimchi, scallion, kimchi tofu sauce
Mix and enjoy
