Cauliflower and Carrot Gratin with Cheddar
  1. Divide cauliflower into florets. Cut carrots diagonally into ¼ inch slices.

  2. Cook cauliflower until tender, 8 to 10 minutes. Remove with slotted spoon.

  3. Cook carrots in same water, about 8 minutes. Remove from water and save ½ cup cooking liquid.

  4. In saucepan, melt butter, stir in flour and cook 3 to 4 minutes, stirring constantly.

  5. Whisk in reserved cooking liquid and milk; cook stirring constantly with wooden spoon until thickened and smooth.

  6. Stir in salt, pepper and nutmeg. Blend in cheese.

  7. Place vegetables in casserole, keeping all at same level. Spoon sauce over.

  8. Combine cheese, bread crumbs and butter for topping. Sprinkle over vegetables and sauce.

  9. Bake at 375°F for 15 minutes.
