Romesco Dip
  1. Preheat the oven to 180c.

  2. Chop the tomatoes into quarters, discard the white core and seeds. Add to a bowl with the onion, garlic cloves, bread, sugar and olive oil, and toss to combine.

  3. Pour it all out on to an oven tray, season with salt and pepper and roast in the oven for 40 minutes.

  4. Add the nuts to the tray with 15 minutes to go. Cool to warm.

  5. Add everything to a food processor (squeeze the garlic out of its skin) along with the capsicums, coriander, vinegar and chilli flakes. Pulse to almost course dip.

  6. Season to taste with salt and pepper.
