Blend fruit with immersion blender. Try using other fruits like watermelon or raspberries.
In a bowl mix together, blended fruit, Greek yogurt, lemon zest, vanilla paste, maple syrup, pinch of salt, and cinnamon.
Stir in chia seeds (grind up in coffee grinder for a smoother consistency)
Refrigerate for at least 1-1 ½ hours.
Garnish with extra fruit if you like.
Experiment with different portions of fruit to yogurt. Use all one kind of fruit or mix it up.
