THAI-INSPIRED MEATBALLS
  1. Preheat the oven to 400ºF. Line a large baking sheet with parchment paper and set aside.

  2. In a large mixing bowl, add the ground meat, lime zest, serrano pepper, garlic, ginger, cilantro, soy sauce, fish sauce, salt, and pepper. Use your hands to thoroughly combine the mixture.

  3. Use a small cookie scoop (about 1½ tablespoons) to form and shape the meatballs. Arrange them on the baking sheet and set aside. You should have about 14 meatballs.

  4. Heat ¼-inch layer of oil in a large skillet over medium-high heat. Working in batches, add the meatballs and cook, undisturbed, for 4 minutes. Flip and cook for about 4 minutes more or until golden brown. Transfer to the baking sheet and repeat with the remaining meatballs.

  5. Bake the meatballs for 5 minutes, until the internal temperature reaches 165ºF.
